Cheese Enchilada with Spanish Rice and Black Beans. Salad with balsamic vinaigrette dressing. Garlic pita chips with roasted red pepper hummus. Oatmeal raisin cookie for dessert (not shown)

The food was excellent and I ate the entire thing. The other choice was a salmon salad, but I wanted to live on the edge.
