Can you identify the missing (or substituted) element on the dinner tray and then the two missing / substituted elements on the breakfast tray ?

Comments: East coast dinner service:
To maximise the passenger's rest and tranquility, the dinner service from East coast cities is simplified. There is either an aperitif or a champagne offer (depending on the flight time) and then the tray which comes initially with the appetizer, cheese, and dessert already on the tray. The only exchange done is for the hot dish. This is a coffee/tea/digestif service after the hot dish. Service is usually quick yet attentive and efficient without being too rushed. I am personally not a huge fan of the lobster, but it distinguishes Boston from other AF cities. The "sea bass" appeared to be more like halibut maybe ? Breakfast always comes way too early, it's such a short flight ... I usually just chug down some OJ and attack the fruit, which is always good.

As I said in other comments, I skip the cheese, but being a "gourmand", asked for a second serving of the parline mousse *SHAME*, it's so good ! I waited a little to eat it, as I like my dessert with my coffee.
No more comments for the light meal, I didn't eat it. 4 slices of melon and 4 grapes = fresh fruit ?? It's the only not so great part of the meal services.

I rarely take the cheese selection, but the sherbets are always good. The "turkey" light meal is better than the pastrami, but still "so-so". As for the service, rarely do I have anything to say !

Comments: The three slices of prosciutto were frozen and the taste
was of the melon but the melon tasted as prosciutto, anyway it was
impossible to cut the prosciutto in a curved plate
The beef was good and tender but no paprika flavour, I was happy
about that, the rice was completely without any kind of flavour, only
boiled in water.
The cheese was a President brand little piece of brie.
The butter was not frozen as usual on the plane but the bread was
pretty cold but good.
The yogurt was a wonderful Dannon Vanilla Cream, very good.
The cake was good but so hard to cut.
The knife was a real inox knife!!!

Dessert - Nutty chocolate brownie, a tub of apple puree and a small dark chocolate bar.

Comments: Starter - Not particularly appetising in appearance! Ate a few pieces of apple.
Main - Nice looking main - a little over cooked and dry underneath, but still tasty. Would be better if there was more than one consistency/variety to put on fork though!!
Dessert - Brownie very dry, did not eat much of it! Apple puree would have been alright if it had been covered with pastry and made into a proper dessert, not just on its own in a tub!!
Accompaniments - Bread roll very cold, I warmed it on top of my main meal dish! I would have preferred real butter to the margarine.
As per usual with the vegetarian meal, I was served well before everyone else, meaning I did not get the offer of a drink first, but I requested a white wine when I was served, and the F/A took it to me immediatly (also came back very soon after to offer me more - I took it!) I received a small carton of water when the non-vegetarian meals received a full bottle - dont know why!
I am a vegetarian, but I am often tempted to select a regular meal and avoid eating the meat, just so I am not presented with what seems to be a vegan meal!! All in all, not a meal to complain about.
The F/A who served us was very pleasant and attentive.

Comments: Phenomenal, the first course came with a yummy mini-bottle of olive oil that i poured first on the ham and then on my neighbor, which added a level of ease on the palate.
The main course consisted of filet of halibut with lemon butter and braised fellel, zucchini and glazed carrot. I'd fly back to SF again just to have this meal.
The flavor of the chocolate orange cake was enhanced by a 10 yr aged tawny port, which acted as a sleep enhancer as well.

Meal: lunch - appetizer - These was a light meal served after we had a great breakfast on the lounge. Boarding the Concorde actually happened on the ground, in a special lounge at CDG: you handed in your ticket and your coat when you entered this room.
Drink: Unbelievable wines.
Comments: These are some old pictures I took with a Mavica on my one and only flight on the Concorde. The pictures speak for themselves: it was one of the best meals I ever had in a plane, and definitely the most carefully arranged.
Those were the good old days of real cutlery (by Christople, no less!), beautiful china, and lots of charm.
